Meatballs in Creamy Mushroom Sauce

**Ingredients:**
- 1 medium onion, finely chopped
- 1 pound ground meat (beef, pork, or a mix)
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 can of milk (use the same can from the soup)
- Olive oil (for browning)

**Instructions:**
1. In a large bowl, mix the chopped onions into the ground meat. Shape into meatballs.
2. Heat a skillet over medium heat and add a splash of olive oil.
3. Brown the meatballs on all sides.
4. In a separate bowl, mix the cream of mushroom soup with the milk until smooth.
5. Pour the soup mixture over the browned meatballs in the skillet.
6. If the sauce becomes too thick, add a bit more milk to achieve the desired consistency.
7. Simmer the meatballs in the sauce for 30-40 minutes, stirring occasionally.

tortellini soup Papa's

**Ingredients:**
- 1 teaspoon olive oil
- 1 teaspoon bottled minced garlic
- 1 medium onion, chopped
- 1 (14 1/2-ounce) can salt-free diced tomatoes, such as garlic and onion
- 14 oz chicken broth
- 1 (9-ounce) package fresh cheese tortellini
- 1 (6-ounce) package fresh baby spinach
- 1/4 teaspoon black pepper
- 1/4 cup (1 ounce) grated fresh Parmesan cheese

**Instructions:**
1. Heat olive oil in a large saucepan over medium-high heat.
2. Add minced garlic and chopped onion to the pan; sauté for 3 minutes or until tender.
3. Stir in diced tomatoes and chicken broth; bring to a boil.
4. Add tortellini to the boiling mixture; cook for 5 minutes or until tortellini are done.
5. Reduce heat to medium; stir in spinach and black pepper.
6. Cook for 2 minutes or until spinach wilts.
7. Ladle soup into bowls; sprinkle with Parmesan cheese before serving.
